At this stage Parmesan has not yet reached its full maturity, since it acquires its complete and typical characteristics only after a period of aging ranging from 18 to 24 months. It is ideal for some uses in the kitchen, as a snack or to accompany aperitifs.
It is perfect for those who prefer to enjoy this "young" Parmigiano-Reggiano as soon as it has completed the minimum seasoning period of 12 months and has passed the quality test required by the rules of the production specification.
It has a more pronounced lactic base, resulting sweet and sour at the same time, and does not lend itself much to being grated.
